
Potlucks are especially tasty in the autumn season. A couple weeks ago my lovely roommate had a birthday and we invited all of our pals over to eat and celebrate.
A week before that, I visited my folks and my mom gave me three HUGE yams.
When it came time to cook for the potluck I scavenged the fridge and cupboards to see what I could pull together in the hopes it tasted fabulous. I was lucky.
Above is a picture of what I call “Yams, Crans and Apple.”
- First I used a bag of cranberries and made a simple cranberry sauce by combining cranberries, water and some sugar in a small pot.
- In another pot I took two thinly sliced apples and boiled them with a pinch of cinnamon. Once they were boiled I whisked them into a sauce.
- Then I combined the apples and cranberries in the same pot.
- Meanwhile, yams were chopped and now boiling in a third pot.
- Once they were done, I mashed them and stirred in a bit of brown sugar.
- Once the yams were mashed, I poured all but 1 cup of the cranberry and apple sauce into the same bowl and stirred the ingredients together.
- Then I spread the yams, crans and apple mix into a glass dish and put the remaining sauce on the top.
- Finally, I topped the dish with pumpkin seeds, brown sugar and almonds.
- I tossed the dish into the oven, waiting for the brown sugar to warm up and served the it to the delight of myself and our fabulous company.
